    Butt, butt.......

    Butt, butt.......our local (awesome) butcher gave a friend of mine a Cherokee pork butt to try. Well, we thought how can we give an objective-subjective opinion if we don’t have a "baseline" to compare? So tonight we prepped a Berkshire butt for that. The butts are on!

          Well right now, I’ve had a few beers after prepping those butts. So hopefully tomorrow my objective – subjective opinion will be back in calibration.

              OK, somehow I think my friend was not paying attention to the label, and me being a newbie doesn’t know Cheshire pig from the Cherokee pig (if there is one). So I called up tonight and I said, or I asked, was that a Cherokee pork or a Cheshire pork. His answer was, it could’ve been a Chesire pork. So at this point in time, we’re not sure what we’re comparing our Burkeshire pork to,?

                Cheshire just went in faux cambro
                Berkshire is at IT 195, it is a few pounds heavier, bumped cook temp to 250*
