Looks awesome! Who took the pics looks professional? Part of the reason I don't post pics often is my camera skills suck!
What's with the little metal medallion stuck on the end of the rib?

Just the Moonbeam and my iPhone. I have literally thousands in camera gear. The dang iPhone works wonders.

Oh too, that's just one of my Grill Pinz. I have two racks with different rubs so gotta know in the end.

That looks Delicious, and the use of Old No7 is a great twist. Is this a Recipe / Technique that is written somewhere? Or is it a potion only the most Pit Masterful are worthy of?

I have done this a time or two! Only had one explosion to date.

My ribs are mostly the same.

        Mustard slather
        a good AP rub
        a good rub
smoke for a few hours or three
Crutch with brown sugar, Parkay, honey, and sometimes a shot of whiskey or two for an hour
back in the smoke to firm up and finish.

        Back story,

Huskee here in the forums, started some ribs very late one night. Well he got to nippin the sauce, fell asleep for like 12 hours straight and cooked his ribs at like 350 degrees. This all reminded me. I need to do up a batch of ribs.

          I think 12 hours @ 350 might = rib jerky - bones and all.

I'll let the viper run all night at 230. Want to see how long it will last. I have a suspicion...
