And finally the finished packages. All set to be carried on the plane to Florida to surprise my dad with home smoked bacon when we visit this weekend. One package of pastrami bacon, one package of regular (aka the smoked) bacon and one plain which was cooked on my WSM after the first two were done and with no added smoke. Still hate slicing it by hand but I think I'd have my hand chopped off it I showed up with a meat slicer.
