    HELP! Boston Butt from butcher looks different

    Hi, Got 4 pork shoulders from butcher which arrived today.(sadly no chance to see them prior to arrival - not easy to get good meat in China) It looks completely different to the other 2 Butts I have cooked - I assume they have sent me the picnic rather than the butt. See images below.

    Was about to salt them as cooking them in about 19 hours time but they are still frozen.

    I need to remove the skin is there anything else I should do in order to get good pulled pork from them.

    Have a large party with a lot of my colleagues coming from work to taste my BBQ for the first time.

    It’s a little hard to tell but looks like you may have the entire shoulder blade rather than just the top portion that come in a classical "butt" as we know it. So maybe some butt and some picnic. Should make great pulled pork. Skin it and proceed as normal. Good luck!
