Pork butt better to have 4 5lb butts or 2 10lb butts

    Pork butt better to have 4 5lb butts or 2 10lb butts

    Hi,

    I am going to smoke around 20lb of pork butt on weber smokey mountain(22 inch). Other than presumably the cooking time will be faster if I choose 4 5lb butts over 2 10lb butts, are there any other considerations I need to take into account.

    What would you do 4 5lb butts or 2 10lb butts and why?

    Time might not be a lot faster with 4 as thickness plays major role. There will be more surface area with 4 and therefore more "bark". Most consider that a good thing. I vote for 4. Enjoy!

      I'd go with 4 5 pounders for the additional bark. It's thickness more than weight that influences cooking time, so if the thickness changes, so will the cooking time.

        Welshdragon, In General I agree with @HorseDoctor❗️ My Only Misgiving is I think with the Smaller Chunks You end up with Drier Pork, IMHOP❓
