    Yeah I did it, found the rabbit hole

    Someone (name omitted for his safety) on one of my other posts forewarned me to stay away from making my own bacon. Well telling this girl not to do something is like giving money to a methhead and telling them to buy food.

          There could only be one reason not to make your own bacon. You'll never want store bought again. Plus it is more addicting than meth. You have doomed yourself to a future of seeking out pork bellies with sweats and shakes waiting for it to cure.....

                I cannot imagine someone from this forum advising you against the bacon. It's great, it's easy, and there is absolutely no reason not too. Read up on the "Tried & True" recipes, especially the part about the #1 Prague Powder and the calculator and you will be just fine! And the best of luck to you.

                  Oh, I thought the Makers Mark was to keep from getting Dehydrated while cooking. I guess it will be ok in the bacon too.

                    Noooooo, the wine is for staying properly hydrated, the rest of the MM is for other recipes to be determined. I do however have 30 # of beef bones coming in next week. :-D

                      OK the flavor on this one is unbelievable!!! I roasted some of the peppers and added in some fresh sliced to notch up the heat a bit. I also added in a couple roasted Serrano, Lemon and carrot for heat and to layer the flavor profile (I grow these in my garden, dad loves them). Flavor was strong, not overwhelming. I could still feel the capsaicin tingle a good 30 minutes. Not burn, just tingle.

                      That description has definitely sold it to me! I hope that I can get even close to what you are describing. I'm going to have to pay the butchers a visit this week and get going with this for my first go at bacon...

                      For clarification, the carrot and lemon are a variety of hot pepper.

                    You'll never be able to go back to the store. We have some about to into the brine. This is from a previous cook. Just did Canadian bacon last week...

                    Couldn't find one of the finished product...but here's a bunch going into the PBC. Think I did over 20lbs that day (sent a bunch to family).
