St.Louis Spare Ribs and Baby Back Ribs at the same time
Hello everyone,Kids gone to college-house is a mess,but i need to smoke something to ease our nerves(therapy right?)Got 1 slab of each which is perfect for us and leftovers.Heres my usual 6 hrs for SR at 225(4 hrs smoke 1 hr wrap 1 hr finish)BBRibs same deal but 1 hr less with great results.Im a wrapping foil guy but i like only 1 hr in foil or less.Having said all that has anyone ever had a chance to do both in the same cook?Things you learned?tried?changed up?Results?Thanks
I've read to put the shorter time meat in later during the cook, and I've done that successfully in the PBC. I also have just taken what ribs were done as they were done then put them in the cambro to hold. I never wrap ribs, so I don't know the mechanics of that, but I think it would be similar.
