    Pit Barrel Pulled Pork

    I have made pulled pork on the PBC many times but this is the first time I skipped the crutch per Meathead. Given the PBC's limited fuel capacity I was concerned about it stalling and then running out of fuel. In the end I just piled a little extra charcoal into the basket, slapped the meat on the grill grate, set up my Maverick ET-732 and about 8-9 hours later it hit 203. It was slightly drier than past cooks but it was by far my favorite as I really enjoy the crispy bark bits. I will never crutch my pulled pork again if I can avoid doing so. It was so darn easy for the results I got, it almost feels like cheating.

      Yeah buddy! I rarely wrap either, unless I am up against the clock or something. You do loose a bit of moisture, but I think the extra bark is worth the sacrifice.

              I'm with Spinaker no need to wrap. If you know you will be in a hurry just crank her up. Otherwise just wait it out. Yes there is some moisture loss but with bark, juices, and other items you hardly notice.
              Nice! I'll have a sammich...please??

                    Yes that was the inspiration, I always chuckled every time I heard the local news introduce the "Chief Meteorologist" and I was like whatever, he's just a weatherman
