    One Last "First.

    Here we go!

    This is probably the last of what has become a series of "1st." And this time it is Ribbbbz!
    They are center cut ribs, St. Louis style. I think it was my most well controlled cook, I mean it did not wander off my temp mark very far at all. I guess it averaged about 235* Maybe I'm getting the hang of this thing.

    I had some "technical" difficulties, it seems the software determined one of the pictures to have been "corrupted." I'm not sure, but I don't think it was actually casting aspersions on the character of the picture, but it did find something objectionable about it. And I really ain't in the mood to argue with it. So this pic of the actual serving has hit the cutting room floor, where it shall remain. . .

    I'm a little worn out today, so I think I shall take tomorrow off!

            Did you make more then one rack? you will need something to regain your strength tomorrow. I don't want to worry you are not eating enough. That a nice looking rack o pork!!
