    Hold Dem Ribs

    Trying to plan ahead a little for this weekend. We hold other meats in a cambro to finish a process. Ribs are done when they pass the "bend" test, so is there any harm in wrapping and holding them for a couple hours in a cambro?

    Nope, no harm! I'd hold them as low as you can & as briefly as you can though, to avoid them just becoming pulled pork with bones.

      Personally, I don't like to wrap the ribs individually. Like Huskee mentions, they can become pulled pork with bones.
      I like to use a large service pan with a low profile wire rack in the bottom. Then I carefully pile the ribs into the pan, on the rack, and then cover with HD foil. Then I place in an oven as low as possible. I held rib for a few hours using this method with out issue. Really the key is to keep that oven as low as possible. Last time, I used my buddies Traeger XL. I set it to 160 F and let it go.

        I wrap in parchment paper then foil and into a cooler. Still hot after 3 hours.
        I think they will become pulled pork on a stick if they came off the smoker already overcooked .
