This is my second time doing a pig this way. Took out the grate and set the pan on the ceramic setter to get it to fit. Also, in order to fold him up this way I cut out two lumbar vertebrae from the inside. Can't wait to eat him for dinner!

The cook actually took far less time than I thought it would. It hit 200 degrees internal after about 4-5 hours. Makes sense tho I guess since it's not as dense and thick as a full butt or shoulder. Already sampled some and the meat is SUPER tender. Used Rufus Teague's rub.
