    Let the cook begin...

            When pork butts are finished hold at 170. I will be there as soon as I can!

                Most of them on the Lang and maybe 3 racks using the PBC

                      Nice cook you have going! This all in prep for a Final Four shindig later? There's something about the late evening/early morning cooks with auto temp control setup - feels like cheating for a few minutes until a guy hits the pillow and wakes up knowing there's a present outside!

                        Nine racks of baby backs in the Lang and the other three will go in the PBC since I have to save room in the Lang for the beans. Later today 16 chicken quarters and mac n cheese will be going in the Rec Tec. Click image for larger version
