I cook them two ways for the family because of the fall off the bone issue. I cook them at between 225 and 250. I haven't gone up to 275 but will some day. Spinaker and the PBC folks have me convinced that the ribs are just as good and the one hour difference (5 v 6) is appealing. For my fall off the bone fans, I do the 3-2-1 method. I prefer the 3-1-2 method for myself. The nice thing about this is that you can start doing whatever tests you prefer and pull them early. If it's the bend test and you become comfortable with it, you are good. Same with the temp test or the probe test.
