And they turned out really well, lot's better than what I got at The Rendezvous. It wasn't really Meathead's recipe since I didn't have any celery seed at all or whole allspice but it was as close as I could get at the time.
I had a couple racks of baby backs I salted on Saturday and was going to smoke on Sunday two weeks ago but I got tied up finishing up the sunroom addition(electrical trim and hanging ceiling fans) and I knew I wasn't going to have time to deal with a smoking session. I finished up around 3:00 and remembered reading the AR page on Rendezvous-style ribs so I threw together the rub and mop, fired up the gasser and threw on the meat(I did wrap a small chunk of wood in foil and put it on the burner for a little smoke flavor).
It took about two hours for the cook but the results were delicious! I'd eaten ribs at Rendezvous a couple months ago and wasn't really impressed but these were really good.
I have celery seed and whole allspice now, I'll definitely do this again!
