What rub to use for "twice smoked" Spiral Sliced Ham?

Planning to smoke a spiral sliced ham for Thanksgiving by putting honey and a rub sprinkled between the slices and smoking at 240. I haven't tried Meathead's Memphis Dust, but was thinking of using that on this. What do you think of that choice? What would you use.

By the way, I plan to glaze the turkey at the end with a rootbeer/pineapple glaze that we have used in the oven at the end.

Memphis Dust is a good one for sure! I have tweaked it just a bit for my own personal taste, (or lack thereof).

Hey, have you ever tried doing a 'carving ham?' .. I got one going this year. Gonna use a Bourbon glaze to finish it. Good luck brother!

      From Malcolm Reed-

Blend as the rub, glaze is good after an hour or so when rub gets candied a bit

      Sugar Blend for Ham
      • ½ cup Brown Sugar
      • ½ cup Natural Sugar in the Raw (Turbinado Sugar)
      • ½ tea Ground Ginger
      • ½ tea Cinnamon
      • ½ tea Fresh Ground Nutmeg
      • ½ tea Spanish Paprika
Here’s the recipe for the Honey Glaze:
      • ½ cup Orange Juice
      • ½ cup Apple Juice
      • ¼ cup Brown Sugar
      • ¼ cup Honey
I doubled up on honey in the glaze and reduced it a bit in a sauce pan on stove.

Good luck! Let us know how it goes!

@EdF Your local Costco or Sam's has them this time of year. I just paid $22 dollars for a 10lb carving ham.
