ISO Ham Bone Recipes

Just broke down a bone in picnic ham and have a nice pile of scraps and big hunk of bones left. What are your favorite uses for these remenants?

Ham n' Beans, or Jambalaya, bout a dead heat, is where I most often use 'em. Yum!
