When smoking a Pork Butt, is the use of cambro at the end of the cook only to keep the butt warm until serving time, OR does it improve the meat - tenderness, flavor, moisture, etc. Also, will it soften the bark? Thanks> Jim Burgin
It will make pulling easier. Just make sure it stays warm by filling up any empty air space with newspaper, etc. I have 3 sizes of faux and real cambros (2 faux, 1 real), based on how much meat I am transporting.
If you have actual bark established, it will bounce back and firm up once it steams off when you unwrap, no matter how long you keep it wrapped.
