    Very small pork butt section

    I smoked a very small (2 1/2 pound) pork butt section. I thought it would take about 4 hours to cook, it took a little over 6. I thought it would dry out, but it was moist. There was not nearly as much bark as I would expect. The flavor was fine.

    Overall I was pleased with the outcome, but I will stick to larger cuts. (Not enough leftovers to make chili with.)

    Walmart here cuts them for the tray packs that size. They look more like a thick steak. I'd rather a 4-5 or so pound minimum.

      Wrapped or no ?
      We butterflied a few 8 pounders on Friday
      got em done in 4.5 hours at 300 cook temp
      wrapped meat at 160 internal
      I wanted to try stick burning in the Southern Pride
      And used a new rub combo

        No wrap, mainly because I wasn't getting the bark I wanted and also to get a baseline on something that small.

        I have never done on that small. I think the smallest I've done is 8 pounds. After your description even though it is just the wife and me and sometimes son, his wife and two small grandkids, I think I stick 10 pound Butts and leftovers.

          I would take those and make Carnitas. Pork shoulder is perfect for that. Just cut it into small steaks. It works great.

            We had pulled pork like normal, there was barely enough for a sammie today. All things considered, I'll stick with larger cuts so there is plenty left for sammies, enchiladas, chili, or stew.
