I think meathead changed most of his recipes to using water instead of oil because the herbs disolve and reconstitute better in water. And i have to agree with him on that. Since I changed to using water the barks on my meat are much more flavorfull.
Yes. I had always been told that most spices and herbs dissolve best in oil. SO I took out most of the herbs and spices I had and put them in a glass of oil and a glass of water. Sonofagun, water was by far the better solvent. I discuss this in my article on the Science of Rubs.
Yep..I read that about spices and water...but I thought the oil was for appearance. Today I am making two racks without oil and one with oil. I'll do a blind taste test with the relatives.
Update: We cooked 1/3 of the ribs with an oil coating and unfortunately, I lost track of which rack had the oil. At the end of the day, there was no difference in appearance or taste.
