Plastic wrap does nothing other than prevent cross contamination. Check that, often a lot of rub comes off on the plastic. I usually don't wrap.

Question about prepping ribs the night before a smoke - plastic wrap or not wrap?

I waited and put the rub on while the charcoal was starting and the kettle was preheating because I was afraid of that happening. I did wrap with plastic overnight after I dry brined the ribs but only to prevent them from drying out. I had that happen one time.
