I got busy this week what with work and all, and completely forgot to take the 13# butt out of the freezer. Now it's Friday night, I should be dry brining and dang it - no big lump o' butt in the fridge.
Time for Plan "B" . I'll let you know what that is when I figure it out.
I took 12 pounds out of the fridge and after a couple days were no where near thawed, I put them in cold water still in the bag and they thawed enough to brine in a couple hours. By the time they went on the grill they were almost entirely thawed.

I was going to bag it for this weekend (arrgh) but then I heard my wife on the phone inviting a friend for dinner tonight for BBQ ???!!
The big store pre-packaged rib racks s were all pumped full of "stuff" including sodium, and even those were almost $5/lb.
So off to a smaller market to buy non-prepacked ribs at twice-normal price, and a couple of chickens. At least they always have ribs.
Off to the PBC to get this thing started. Looks like dinner at 7 PM tonight !
