7lbs of pork shoulder started last night at 9pm in kettle w SnS is nicely at 192IT just wrapped until IT 203. Got up at 2am when Maverick alarm went off at 216F, added more water, briquettes, and ash sweep. Also took drippings and have Meathead's Bourbon Barbique Baked a beans in slow cooker started this morning. Gonna be a good day and good eats. Sitting with cup of coffee reading the Pit and dreaming of dinner to come. Pictures will follow. Mitch

Just took last piece out of the cue at 203 IT by thermopop. Total time 14 hours low n slow. Regarding pics, yeah wrapped them before I wrote post. Could have planned better. I will photograph once unwrapped after faux cambro hold. Beans still a bit wateryi crock pot, but tastes great. Added some chopped dried dates on top of Meathead's recipe. Sweet and porky so far. Plan to put some pulled pork in the beans to meat it up some. M

Turned out really nice and enjoyed watching the Olympic swimming semi finals. The Meathead BBQ beans are really nice. Sweet w a little spice from jalapeño. Well worth the effort. Enjoy your weekend. M
