    Sorry dudes. Consider my entries juvenile and I'm doing nothing other than "thinking out loud."
    I'm counting on you cats "to scare" me in the right direction.
    As I was once told "It's just food MAN!"

      Nothing to apologize for. We're all just here to share thoughts & ideas. The world is full of tradition, some (much?) of it based on misinformation. Challenging that & myth busting is a bit of a "hallmark" for this site. Have a great cook & Happy Birthday to your lady!

    Yo dudes. In response...
    I'm a newbie (relatively speaking) . My post was simply "thinking out loud." I'm counting on you cats to "scare" me in the correct direction. Everything is still experimental for me.

    We'll see what happens. Amazen is lit & Butts are on . It's the lady's Bday and famsz are coming over so I'm hoping to get it done right.

      144 @ 7 hour mark.

      The Amazen was out when I checked but I think it got enough smoke (for my tastes).
      I reckon, like it was suggested, a 10 hour cook.
