Picked up.this nice little slab of pork belly from the local Food kitty today. $3.99lb looked like a pretty good deal. Thinking of making pork belly burnt ends but looking for other suggestions as well. Gotta use the smoker though as I'll be gifting at least half of it to our neighbors that watched Gidget for us while we were out of town last weekend.

Do what I did....divid it up into thirds, lengthwise: 1) smoke it; 2) cure it for bacon; 3) smoke it, but differently.

You all, and definitely Delaware, must have different Food Lion stores than we do. Our two local stores are always light on stock and variety. Always a little dingy.
Had to visit a shopping center construction project we are involved with in lower Delaware the past two days. Needed a restroom so entered the Food Lion in the complex and was shocked by the store. Bright. Fully staffed and stocked. Clean! Specialized counters for seafood and the like. I honestly couldn’t believe this was the same chain. Maybe they had to upgrade the store to compete with the Harris Teeter nearby. Honestly if I wanted to buy a nice pork belly, our Food Lions would be the last place I looked.

So the Home Office is right down the road in Salisbury. They are updating the one down the street from my office with a whole new self checkout area. It is an older one but has great produce along with a grilling/smoking section that has ribs, pork belly and tri tips of all things. The tri tip is $9.99/lb which is pretty good. They built a new one about 3 miles up the road and it is NICE. Lots of take and bake options too.

I'm kinda in this camp - plain pork belly with S&P is heavenly. Great in so many dishes or solo. Sammiches, ramen, chunked in a hash... so many things. Nothing wrong with PBBE, but they're honestly a lot of work, and I can only eat a couple bites.
