    Mangalitsa pork

    Had never heard of this breed until it surfaced in the bacon thread. Am going down the rabbit hole, Breed was developed in Hungary, early 1800's, by crossbreeding, resulting in pinker more marbled pork, described as the Kobe of pork. Prices are $20 to 40/lb.
    Am interested in experience with, and sources.
    There appears to be a farm/supplier near Kettle Falls, WA. (north of Spokane). Mangalista Estates in Iowa seems to be a major player.
    Am going to check a couple of local potential sources. They probably will not have product, but may have knowledge.

    I've been wanting to try both mangalitsa and iberico. Haven't been able to bring myself to order them, though...

      Had iberico when we visited Spain. Was fabulous. Hadn't heard of mangalitsa until now. Following this thread!

    Its a great pig. Used to make the best lard on the planet. My favorite though is red wattle.

    In the bacon thread is a reference to Roaming Bison Ranch in western Montana. They have a nice website; I plan to order some.

      Predicted delivery was next Wed, July 8. Received it today, July 1, nice and frozen. Many chops, ground pork, ground sausage, a pack of breakfast links, one rack SLC, one loin, bunch of bacon. All nicely cryovaced.
      Glad we are home. Have not received any shipping notice.

        ecowper. You apparently have Hungarian connections or interest. Have you any experience winth Mangalista pork?
        Heath Putnam, a burned out investment banker, first imported pigs in early 2000's, was based in Auburn, WA, but worked with a family near Spokane to raise them. Later, 2010?, he apparently sold everything to a New Jersey horse boarding outfit, Mosefund Farm. They apparently sold stuff for awhile, but now appear dormant.

        It is an interesting rabbit hole. Pork chops tonite. The breakfast sausage is fantastic.

          SheilaAnn. Pork chops were mighty fine. Each weighed a bit over .6 pound. Each had quite a bit of solid white fatcap, plus very nice marbling. Did not trim anything. My wife did not much care for the fat, but I thought it was great.
          The $9/lb price seems reasonable, and markedly cheaper than other online sources.

          Salt/pepper only. Pellet grill @ 225, then seared on gas. 1 inch thick.

        I live in Europe, here it is readily available. It’s real good. I’ve bought and cooked Iberico countless times and slightly less mangalitza. But still plenty. It’s real good. If I were to try and compare I would say Iberico is just a bit fattier, and mangalitza is slightly darker in color. But it depends on the quality also, as always. Regardless, if you see it, buy it. It doesn’t compare to regular pork.

            The topic header is misspelled. Should be Mangalitsa. There are also other spellings, but this seems most common.

            Further wallowing in the porcine rabbit hole.
            Duroc is a bit leaner than Berkshire. Kurobuta is identical to Berkshire, but is the name used in
            Japan and the name used by Snake River Farms for their Berkshires.
            Commodity pork is typically Yorkshire.

            Had 3rd chop last night, shared it. The fat is delicious, but 2 or 3 bites are enough, very filling. May trim about half the fat in the future, saving it to render into lard. The band saw butchery on this one was odd; several pieces of bone which were difficult to work around. But delicious.

                Omg….. not so much. Ok, I placed an order ($100 ish). I get an email from them stating with the weather so warm, they could not guarantee the product would arrive still frozen. But if I were to add 10# ish more, shipping would change and it would be fine. While that to me is a bit of a red flag (the site would not show shipping charges at all), it’s gonna be hot here for the next week. Well, hot for LBC which is low 90s. And our local drivers can’t read the words perishable……
