No bark whatsoever, used enough rub for three cooks or more. Just like doing "party ribs". Cut em down and of course it will cook faster but not better in this case. No thanks.
When I’m cooking large batches of pork butts for an event I also do a few in an instant pot to add in during pulling to add extra moisture. 8-9 lbs takes 1 hour.
Not going to bash Traeger since I have 2 pellet smokers (not Traeger).
This recipe is just bad. It is almost "Boneless Country Style Ribs" with the way that the butt was broken down. Then too much rub. Root Beer is interesting, when I put my butts in a pan I add Apple Juice and ACV but a flavorful soda I can see. I guess since the Butt was broken down into smaller portions there was no need to let it rest.
I can cook a 8 - 9 lb Butt in about 6 hours on my PBC, Weber Kettle, or PR42G from the time the meat goes on to taking the meat off. Haven't done one on a pellet smoker except in a class once. If I went with a smaller Butt I could likely get it under the 5 hour mark.
I understand that this video is not directed to people that are into cooking BBQ but is meant for the average home cook that wants to cook pulled pork for dinner on a Saturday or Sunday. For that purpose I can understand the recipe. At least it isn't Crock Pot pulled pork.
