    Pork Roast Leftovers

    With just me and the Mrs. We always seem to have some leftover sliced pork roast even as we buy the smallest we can. No a massive fan when fresh but even less so when it’s leftover

    As a crutch I will through some BBQ sauce on to muddle through but there has got to be better and different ways to utilize the leftovers

    SobI submit to the wise sages here - what would you do with the subject? TIA!

    I'd slice it into boneless chops and cook enough for today and freeze the rest.

      I cut the bone in roast down in size and froze the balance. We smoked 3 bones for one meal. There was enough left for a second dinner a few days later, i don't mind leftovers. The balance of that was sliced for sandwiches. You could also have frozen the balance in vacuum bags for a later meal.

        I quite often go with a cottage pie (sheperds pie but with pork)

          A couple of things that we do with leftover pork is:
          BBQ sandwiches
          Pork chili
          Tacos
          Nachos

          A pork stir fry often works for me. Soy and/or oyster sauce always makes anything taste good.

            Besides ideas already mentioned.
            Omelets
            Pizza
            Chop and add to Beans
            Quesadillas

            Did this just last night. Sliced the roast and had it with Szechuan noodles. Great combo. In the past, we’ve also used leftover port roast in pho.

              I will cube it up. Then thinly slice potatoes (usually Yukon Gold) and onions and sauté them. Do the potatoes first so that the potatoes get crispy and chewy then add the onions a bit later so they caramelize. Salt, pepper to taste and at the last minute throw in the cubed pork chunks (small bite-sized pieces) and sauté them to heat them a bit and serve. We call this hash and do it with pork and beef. Would recommend. Want to get really crazy?...fry an egg and slap that on top. Dang delicious. Add hot sauce or not as your heart desires!

                  We get pork loin and cut it up in 3rds or 4ths.
                  Sometimes I cut them into chops.

                    I really like giving a few slices a hot fast sauté in butter then covering with a couple of sunny side up eggs. When those yolks run down on the pork it’s wonderful. All you need now is fresh biscuits.

                      Fried rice will carry that pork to your belly
