    Overnight cook almost done, how to hold for dinner?

    Looks like my first overnight cook was a success. Will be ready to come off the smoker by 10 and dinner not until 6 or 7.
    What's the best way to keep it? Was thinking of pulling it around Noon for lunch and just reheating in a crock pot near dinner time. Seems too long to Cambro.

    Not too long. I've often done 6 hours in a faux cambro with no problem. It'll still be serving temp at dinner time.

      I would not pull it until as close to time as possible. If you are planning on serving for dinner I would wait till then to pull it. Air is the enemy when it comes to moisture and it can start to dry.

        I agree with HorseDoctor I've had Briskets go longer than I expected (like taking till 2 or 3 in the morning) I've wrapped in Foil and put them in the Cooler (with a big layer of Newspaper both below and above the meat) They were still Moist Juicy and serving Temp 6, 8 hours later!!

          Well, I couldn't resist. Pulled it for lunch, as it was also used as "payment" to a buddy that helped with some yard work. It's only a couple people for dinner, so I'm sure it will be fine.

            Given where you are in the process, I'd put it in a sealed bag and consider a warm water bath to re-heat it before dinner.

            Good idea. I reheated a half rack of ribs like this a few days ago. Came out perfect.
