        I raised the temp until my ThermoWorks Smoke thermometer gave me an average temp above 225 consistently. I also used the Weber water pan built for the Searwood. It kept things a little more moist.

          Update: so my smoker is more dialed in to an accurate temp. I thoroughly cleaned it and even cleaned off the internal temp thermometer a little. Now my ThernoWorks Smoke and my internal thermometer were nearly the same the entire cook of my first pork butt. I guess I shouldn’t wait so long to clean between a few cooks.

            I clean my probe after every cook. Waiting too long makes it more challenging to clean. I learned that the hard way on my first pellet smoker.

          LegoMySearwood Have you tried the Blasphemy Ribs recipe? You separate the rack into individual ribs before smoking. Allows you to put rub on all surfaces and reduces cooking time significantly. My wife requests them every time I do ribs on my CC Woodwind. https://amazingribs.com/tested-recip...y-ribs-recipe/
