Curing Canadian Bacon

I have started my canadian bacon cure, and I have found out I have to go out of town for a week. I am not sure I can trust my family to keep checking on it while I am gone.

So the question is: Can I dump the whole thing in a 2 gallon ziploc bag, and let it go until I get back? I am following Meathead's canadian bacon recipe, and I started my cure 3 days ago.

Any input is appreciated. Thanks!

As long as it is submerged plenty when you leave it should be fine.

For sure, squeeze as much air out as possible so that it has little room to not be submerged, it goes for two weeks so one week will be ok for sure.
