    Ribs in fridge

    Picked up two racks of baby backs from Wild Fork yesterday. Popped in the fridge late yesterday but turns out I may not been able to cook them this weekend. Given that they were frozen quickly and probably just thawed completely sometime today, would these be okay until next weekend?

    Maybe......that is kinda pushing it for pork.

      I know…for 3 bucks a pound I might I just cook them. I don’t have the people to eat them but I can put away a rack and maybe see what happens if I freeze a cooked rack and thaw next time I’m craving ribs late night lol

      bbq_esq Nothing wrong at all about cooking stuff and then freezing it for later consumption. I live alone, and that’s basically how I live my life, do it all the time. Cook stuff on the smokers/grills, eat some over the following few days but freeze most of it within a day after cooking for use at a later time. If you freeze a cooked rack of ribs and then take them out at a later time and heat them up in the microwave, they’ll taste great.

    Personally, I’d just refreeze them … especially if they’re vacuum sealed. Texture might suffer a bit, but it would be safe to do so.

      So long as the vac seals are not broken….. should be good. Or cook and freeze as noted above.

    Add me to the Cook & Freeze brigade. And yeah, if you've got a vac sealer, you are golden. And, if you have a sous vide, even more golden - reheating vac sealed smoked meat via sous vide is about as close to "on the day" as one can get.

      Are they vacuum packed? If so, they will probably be fine. Vacuum packed stuff sits around in stores a lot longer than most of us would think.

          If I don't smoke it within 3 days of buying, I usually re-freeze. Pork especially gets extra stinky quick.

            The sell by date is an indication as to whether you can keep them in the fridge until you are ready to cook them. I have done that on a few occasions. If the sell date is a few days after your cook I would freeze them I was ready not cook. I’ve done some meats beyond the sell, But, I would not do chicken beyond the sell date.

              Personally, I'd cook and freeze. Nothing is worse than opening a package of ribs to smoke and getting hit in the face with that "bad pork" smell. Ruins it for me.
