I was in Spain a few months ago and got a paper cone full of "chicharrones" at an open air market in Cadiz. They were so good that I decided recreating them would be my project after getting home.. With the help of Google found a recipe which looked about right, and sure enough they were pretty easy to make and tasted surprisingly close to what I got in the market!

Custom built duel fuel "whole hog" cooker.

at my old job, we did chicharrones in one of the commercial combi ovens. I took a video (I’ll have to go find it) it was amazing! It reminded me of when we were kids and for the 4th of July we were given “snakes”. These little cubes that just grew after they were lit. So funky!
A few minutes south of Cadiz is El Puerto de Santa Maria. My daughter lived there for a few years and there was a butcher in the Market place that had a huge tube of chicharrón that I would buy almost every day when visiting. I sure loved visiting and touring around Andalusia.
