Happy Holiday folks. So I decided to cook a crown roast for Christmas dinner and my butcher (Triad Meats in Greensboro, NC) blew me away with a gargantuan 15+lb crown! Not sure I've ever seen one that large. Anywho, smoking it @ 325 degrees on my Lang reverse flow smoker, I'm thinking maybe 6-7 hrs. Any suggestions on the timing? Thanks. Be Peace.

Smoking at 325 that is gonna be a fast cook. I think the last pork crown roast I did was 2-3 hours? I’ll have to check that - but it’s also what I am cooking tomorrow.

PapaBear - I checked my notes from last crown roast - I cooked at 225* and within 3 hours, I was at 130*. From there I turned my smoker off and let the temp carry to 140, that took about another 2 hours - I only turned the smoker off because the roast was going to be done way to early for dinner. So 325 is gonna cook quick, 2-3 hours I would guess?
Tomorrow I’m gonna put the roast on at 9:30-10am and cook at 235* with dinner being served at 2pm. This will give me a little time to sear to finish.

Donw - yes, S&G mixed in with minced garlic and olive oil. I dry brined Monday evening and let stand in fridge until this morning then rubbed and. Back in fridge for a few hours. Smoking at 225* now with apple and cherry wood.
