Someone please educate me on the difference, and which one do I want to pick up at the piggly wiggly to cook? Would probably end up freezing slices for sandwiches primarily.

The butt portion will be more difficult to carve because of the aitch bone. The shank end only has the femur to carve around. The butt will be a bit more fatty and the shank will have a bit more flavor.
If you are planning on slicing and freezing you might as well get a whole ham. Cook once and eat for a long time! And you will have plenty of bones for ham and bean soup.

Ham is the back leg. Butt/shoulder is top of front leg. Shank/picnic is lower front leg. One can get boneless butt. I like front leg stuff. Back leg hams typically come pre-cured and cooked.
