Tonight I have one night off in the middle of several nights at work. I'll be staying awake all night at home, and of course my grill & SnS both miss me. And since StL ribs are still on sale ($2.98/lb) at my local store I picked up a rather large 4lb slab. I have half a 5th of Maker's Mark and a few Pabsts so I will be pretending it's Fri night. This time I will opt for the low end of low & slow since I have plenty of time. 200-220 I think is what I'll aim for. Should get a killer smoke ring.

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
So does that mean tonight, you'll be out on May 13 at 3 am cooking ribs? I'll message you if I get up to pee. Also, you realize that your cook is rolling right into Friday the 13th, right?

Here's 7hrs at ~208-215 avg. Kinda hard to tell from this pic but roughly 25% of the charcoal still left (of one chimney's worth) and a full wood chunk. Still a tiny bit of water left bubbling too.
Cranking my temp to ~240 so I can eat in an hour...hopefully. They look great but not passing the bend test, still quite firm yet.
I haven' t done an all nighter since studying for exams in college, and that was a very, very long time ago. So, will it be breakfast, lunch or supper when you finish this cook.

Done. Total cook time about 8:45. Bend test never really worked properly, they were so thick. The last hour I ended up raising the temp to about 260 actually.
