    Have you ever seen pork chops like these?

    I haven't, so I bought 'em. I don't know when I will be able to cook them, so I may wind up freezing them. From Wegman's BTW.

    Nope. Haven’t seen them. But they look pretty good with some nice marbling. I love grilled or smoked chops. Yum.

      Nice boneless chops. Sometimes our local Meatlocker has Duroc boneless chops like those. Good marbling. Good find for you!

        I think these are chops/steaks sliced from a whole pork loin roast. I see these at our local markets all the time.

        Those look like nice center cut chops from a pork loin, but with a little marbling that you don't see on commodity pork loins. Enjoy!

              I agree - loin chops. It's what I normally buy, but never with any marbling, (until now ).

              Yep, seen those all the time, as has been said, center cut loin chops. Even with that marbling, they can dry out quickly. I'd use sous vide & sear if I had 'em.

                I cook 'em hot and fast all the way. I pull them at 138° to 140° and they are still nice and juicy by the time I eat them.

                RonB that's how I do them too, I go indirect at 350-400. Do you direct, cook over the coals? That sure makes the fat strip tasty.

                Huskee - yes - directly over the coals. I invert my Weber chimney, fill it, light it, and start the chops when the coals are ready. I ues a 13" grate and I do spin it the same as using the SnS.

                Every now and then I get lucky at Sam's Club and find a couple of packages with nice marbled loin chops like the ones you found, Ron. I always grab them up!
