...I've been intrigued by using the vertical skewers to do things like Al Pastor or gyro meat in the PBX. Has anyone ever tried this? I'm hoping it works, otherwise I'm going to have to invest in some sort of vertical spit set up. I have a pork butt that I'm hoping to cook for Labor day...thinking of splitting the thing for Carnitas and Al Pastor instead of the traditional pulled pork I've done so many times...

I don’t have a spit, so I offer this to you in place of that if you wanted to try al Pastor. Perhaps not because we love buying new things!
but, pork steaks, as thin as you can find, marinated in adobo mixture for 24 hours then on a ripping hot grill, either a gasser or your charcoal you have. Flip fast and often until cooked through. It is wonderful.
but I know what you are wanting to do would probably create great food too!

Ever since I've learned of the existence of tacos al pastor, I've wanted to try it...the earthiness of the marinade; the sweetness of the pineapple. If you're not familiar with it, it is thinly sliced cuts of pork, marinated in a chili sauce, then cooked on a spit with the pork slices interspersed between pineapple slides.
This bbq was done back in April (sorry to have not posted the results up here for the first run) based on seeing the hack used on YouTube and Facebook for the PBC. Ok folks - was browsing the snsgrills.com website and looking at recipes and videos, and came across their Chicken Shawarma recipe, and now I am jonesing to make my first shawarma! Their recipe, and the video which was on the SNS Kamado, calls for skewering the chicken thighs, cooking indirect, and then finishing over the SNS
