Just bought a pork loin and am beginning the curing process. I am following Meathead's recipe but did not see what type of wood was good for smoking the loin. Thanks in advance for any ideas.
Weber Summit Kamado with SnS and Vortex.. Broil King Baron, Primo Oval Junior. Primo XL. Love grilling steaks, ribs, and chicken. Need to master smoked salmon. Absolutely love anything to do with baking bread. Favorite cool weather beer: Sam Adams Octoberfest Favorite warm weather beer: Yuengling Traditional Lager. All-time favorite drink: Single Malt Scotch
I've got some curing now too and I'll be using cherry. It's not by choice per se, I just happen to have a bunch of it. Cherry seems to be pretty good on everything.
Brined 6lbs. of pork loin from Costco for just over two weeks. Today is smoking day! Thanks for all of the suggestion....may go with cherry or some peach that I just bought. First try at Canadian Bacon, fingers crossed!
My batch with cherry was awesome, I'll be having another go at it soon only this time I will be doubling up because it's so tasty. Hope yours turns out well.
Maybe a tad salty. I rinsed the loin thoroughly the night before I smoked it. Might cut down on the Kosher salt a little and give it an overnight soak next time. The peach wood worked well. The family still liked it, so that makes it a success of sorts!
