So, USDA doesn't grade pork, and this is their own in house grading system. I have tried their "Prime", and I did think it was a step up over their regular grades of signature and all natural grades. Of course, it is subjective to their inspectors, so YMMV.
Jerod Broussard, I know, but they are trying play off of that just like all the Wagyu beef that isn't Wagyu. SNR calls their Berkshire/Kurobuta pork the Wagyu of pork. I do think PrairieFresh Prime is slightly better than their other grades, but again it is their grading system and just a label.
I really want to try some of the other pork breeds - mangalitsa and iberico for sure. I tried Berkshire ribs, and they were good, but it was a subtle difference.
