    Graduation Pork Butts

    Decided the use the Lone Star Dust on a few pork butts for my sons graduation party. I smoked 8 butts and there was nothing left by 11:00 that night.

      Just a homemade offset smoker. My dad built it around 1982 and I'm still using it.

      Those look great! I'm going to do two this weekend myself, just to clear the freezer. Plus I'm making 10 lbs of breakfast sausage with the third.

        Just curious. How did you serve it? Around my house, more and more people are shying away from bread

          I see that too. I do pulled pork a lot for pot luck dinners or parties, and find that even though I put out buns, which limit servings to maybe 1/4 pound per bun, at least half the folks will just literally PILE the meat on their plates and then top it with BBQ sauce, pushing the portion sizes WAY up beyond what I planned for.

          I’m all about just the pork! I’ll make my bites of pork and slaw, but no bun/bread for me! That stuff just fills you up faster

          We served it pulled with no sauce or condiments. It was kind of like going to Fuddruckers, they could build it however they wanted. I was surprised how many people did not want bread. It was the same way at a fundraiser we did a while back.

        8 butts and all gone? Wow, that musta been a BIG party! Sounds like ~150 people, assuming you had a decent amount of sides as well - or they were ALL teenage boys, then maybe 50 of 'em! lol

          We had an engagement party for my oldest daughter which they invited 80 to 100 people too, probably 75% of them 20-somethings, and half of those guys. All their college and high school friends basically. I smoked 9 butts (84 pounds precooked weight) and grilled 20-something pounds of wings, and the wings were gone in literally 10 minutes. We had only two 9x13 foil pans of pulled pork left in the oven after the party. Those boys can EAT!

          There were a lot of young men there, and those boys didn't just eat, they grazed. Probably close to 100 people at the height of the party.

            Great job Brisket Syndicate - and with a handle like that, surprised I’ve not noticed your posts before now!

            I also have a smoker from my dad - something he had his welders at the sheet metal fabrication shop build out of stainless steel as customer gifts back in the early to mid 1980’s. I’ve been smoking on it since he handed it down to me in the 90’s.

              That's awesome! I think it is cool that my Pops cooked on my pit, I'm cooking on it, teaching my kids to cook on it, and will one day pass it down to one of them, and if they take care of it, multiple generations will enjoy it.

            Young men can consume lots of food. Some of my college fraternity guys when to a chicken house for an all you can eat special. They closed the place down when it ran out of chicken.
