My hickory chip were huge so I cut them just enough to fit in the smoker box
I put the Maverick probe on the lower grate in the indirect heat portion of the grill.
I put the PT on the indirect portion of the grate but, I wonder if it would be better on the grate over the water?
Temp is currently at 226*F but, I have been having a hard time controlling the temp. I have the far left burner on high under the water and the far right smoker box burner on lowest setting so the chips are slowly smoking
I shouldn't say fluctuate. A better term is the fine control. Doing this little PT it was very stable. It settled at 234*F and I didn't touch it. When I had problems was when I had three racks of St Louis ribs going at the same time. Maybe I overloaded the capacity of my grill. I was constantly every 20 min having to adjust the flame as it would be to hot or to cold. I kept it between 225-250*F and got a great product. It would have been nice if the heat stayed constant but, having a Maverick and keeping the remote with me i could do other things and come back and tweak the temp when needed.

The regular grate is removed and that pan sits directly on the flavor bars. I like it because I don't have to fill the pan as often. The grate on top of the pan is just an extra that i bought as the original grate set that high will not allow the lid to complete close and seal. Do you think that is a problem that needs to be addressed

No, sounds perfect. It was hard to tell that from the picture, but on closer look I see it now. I encourage folks to put the water pans as low as possible, IF possible. Well done mate.
