I did some last Wednesday with the same thing. I used a nice pack of sliced pork belly They came out good. I might leave them in strips in the future, not cut into cubes until time for the covered braise.

The ones I got were pretty much square. Like as wide as thick, so they were about 1.5"x1.5" in long strips, which I felt was pretty much perfect for PBBE. I imagine each store may do it differently, and even each butcher within the store. Most of the ones I saw when I bought these were similar, I just picked the thickest, most consistent package with the best meat/fat ratio looking like about 50/50.
