    3-2-1 Ribs, who invented this method?

    Not me, but here is what I found. So who am I to argue with Tuffy Stone?

    The 3-2-1 method for smoking ribs, which is a popular technique for achieving tender, fall-off-the-bone ribs, was invented by George “Tuffy” Stone
    This method involves smoking the ribs for three hours, wrapping them in foil and cooking for two hours, and then finishing them unwrapped for one more hour. It’s a method that has been embraced by many home smokers for its reliable results.

      Hell, over in the free section there is this quote:

    For the size of the half racks I buy, a modified 3-1-1 works very well for me.
    We like the fall-off-the-bone-doneness.

          I did. So there!

          I have no idea who invented it, but it was all over the internet 20 years ago when I was working to up my rib game. Nothing new about it. So I have to dispute that Tuffy Stone invented it in 2011, as I am very confident that I was using the technique years before that.

          Unfortunately, I wasn't taking photos of anything I smoked on my offset in the early 2000's beyond a couple of Thanksgiving turkeys I found in my photo library from around 2006.

            Hahahaha. bbqLuv No master here. Just a peon. I just know the 3-2-1 method was around before 2011. Maybe Tuffy invented it, but before 2011... who knows?

            It was invented in a time when we cooked ribs at 225* . Makes a huge diff at 275* or hotter.

                    My family for the most part prefers them that way too, and while I don't use the method for spares, I use the foil wrap for the extra meaty loin-back ribs, as otherwise those are too dry. I just don't buy those extra meaty loin back ribs if I can help it because of the drying-out issue.
