    Seasoning for bulk ground pork

    to make breakfast sausage? My niece has a BUNCH of bulk ground pork and is looking for ideas to utilize it to make breakfast sausage. The place where they had their pigs processed made awesome stuff, and she called to see if they would sell her what they use…nope.

    I like the Penzeys breakfast sausage seasoning. They also have an Italian sausage seasoning that's good.

      For me, I’d add red chile flake or even chopped green chile if available

        ItsAllGoneToTheDogs you know, now I want to try an apple pie with green chilies. The key is the right crust. Maybe a nice thick crunchy pastry.

        Actually green chile and applie pie would compliment each other well! You wouldn’t want a lot of green chile, but some would provide a warm, roasted flavor to the sweetness.

      This is the seasoning mix I use.
      Pork Sausage Seasoning Mix
      1 T Salt 1 T Dried Parsley
      1 T Pepper 1½ t Cumin
      1 T Sage 1½ t Onion Powder
      1 T Crushed Red Pepper 1½ t Garlic Powder
      Use 1 T of seasoning mix per pound of ground pork

        This is the brand I use. It comes in mild and hot. I don't mind spicy foods, but not for breakfast. I bought the hot first and then bought the mild to mix with the hot and it was plenty hot for breakfast.

          PS Seasonings in Wisconsin have good sausage seasonings. We like this one especially. We also like their Ball Park Brat Seasoning.

          Enjoy breakfast with our traditional Breakfast Sausage Seasoning. Make mild-flavored breakfast sausages or patties with this mix of salt and spices. No MSG.

            I’m about to head to Park Packing for some bacon and pork butt so I can try my hand at sausage patties!

              Welp, the first batch was decent. I used the meatandsausage.com recipe and it was a little too potent I think. Ii used a little less on the second batch which was good. I will definitely be experimenting with it more!

                I used the breakfast sausage recipe. It just seemed too salty and felt like it had too much of everything.
