    Neighborhood pig roast

    Our awesome neighbors across the street held their annual Pig Roast yesterday. Our hosts roast a whole, small pig in one of them roasting boxes, with the platform of coals on top and the animal basically spatchcocked in a rack beneath. Jose made sure to touch up the crispiness on the skin with his hand torch, even...! He handed out cracklins & chunks of pork like cheese on crackers. The whole thing was delicious! And it was absolutely perfect weather for the final night before returning to standard time, fine and dry with temps in the high 60sF/20ishC to start the late afternoon, no cooler than 55F/13C by the time we headed home about 7:30.

    how cool is that! I’ve looked at this cookers….just to be able to cook a pig once a year! Your buddy has that process down to a science! Love it!

      Totally cool. I too have considered getting one of those boxes. But I always chicken out. Not sure why really. Hmmm. 🤔🤷‍♂️

        Cool! The caterer of my nephew’s outdoor wedding reception did a pig just like that and that skin tastes amazing!

          That looks great. What a wonderful time. It’s been a couple of years since I enjoyed whole hog. Your post really gave me the taste for some. Thanks for sharing it Dave.

          Wow. That is awesome!! How long did the whole process take? I would imagine that butterflying the pig like that would speed the process up

            Remarkably quick, I think the cooking was done in less than four hours.

          My cuban friends use those La Caja China all the time and turn out amazing results. Looks like a great time! And using the torch to crisp up the skin is such a terrific idea.

                That looks so good.
                I still remember that one Cochon de Lait I went to where I could just pull the pork off with my fingers. Never had anything else as good.
