Our awesome neighbors across the street held their annual Pig Roast yesterday. Our hosts roast a whole, small pig in one of them roasting boxes, with the platform of coals on top and the animal basically spatchcocked in a rack beneath. Jose made sure to touch up the crispiness on the skin with his hand torch, even...! He handed out cracklins & chunks of pork like cheese on crackers. The whole thing was delicious! And it was absolutely perfect weather for the final night before returning to standard time, fine and dry with temps in the high 60sF/20ishC to start the late afternoon, no cooler than 55F/13C by the time we headed home about 7:30.
