    Smokin' The Butt Tomorrow

    I picked up a 9# butt to bring justice to the smoker and me for the dry shoulder.

    I cut it in half, mainly because I didn't have any foil pans big enough to hold the whole thing.

    Other than my rub and sauce, I am going to follow Tuffy Stone's recipe to the letter as far as technique and time goes.

    As Kimi Raikkonen used to say:

    I still had the dorm frig that I used as a yeast refrigerator back in my all-grain beer brewing days.

    Since Tuffy said to put the butt in the frig uncovered overnight, I decided it would be best to take the dorm frig out in my shop and convert it for use as a dedicated meat frig.

      Got a dedicated meat fridge in my living room. Time to plug it back in for sausage making this week.

            Well, the butt was excellent!!

            I got the best smoke flavor ever since I used my new Amazin' smokie thingy along with the pellet grill.
            Used hickory pellets, along with the apple juice injection that Tuffy specified.

            We put several slices in the crockpot set on Low with BBQ sauce over them.
            Tender and delicious.
