i plan on making a little fatty soon but i am unsure what to expect the cook time to be. i plan to use 1lb of breakfast sauage filled with pepperjack cheese, onions, peppers all rolled up with bacon over it.

I would plan on about 4 hours. That is usually how long mine take at that temp. More if its really thick. That sounds like a great combo. I wish I was coming over. Good Luck!
I have never had peppers or onions in mine but, I would think you could just put them in raw. Its gonna have enough time in there to cook. I wouldn't pre-cook them, they might turn too mushy. DeusDingo
