Over smoked ribs

    Over smoked ribs

    Looking for some help here. Smoked baby backs today. Enough for 14 people. They are vacuum sealed and in the freezer. Ready for a dinner next week. I think I over smoked with hickory.

    plan is to thaw next week and sauce. But I over smoked. Any suggestions how to serve to recover?

    Are they over smoked (as too much smoke flavor) or over cooked (falling off the bone)?

      Can you give us a little more info? What did you cook them on, how long, how much hickory did you use?

          Hi, thanks for the quick reply. I cooked on a chubby. They are near fall off the bone. It seemed great when they came off the smoker, but seemed dried out when cooled. I ate some and they just seemed a bit bitter…

            What was your fuel source? Charcoal with wood chunks? All wood?

              I had something similar happen many years ago and I put some ACV and water in some foil and warmed them in the oven (meat side up) at 250 and they came out really good.

                If they are truly over cooked-might consider pulling the bone yourself and go for Cochinita Pibil....
                I would go heavy on the tomato and bell peppers if it is too smokey

                  I agree if they're too smoky and a bit bitter, then "dilute" the meat with other strongly flavored ingredients. Pull the meat off the bones, shred, and use in tacos, etc.

                  The other option to consider is to see if the sauce you were planning to use will even out any bitterness. If you tested the plain ribs, try a test with the sauce added

                    It sounds simple, but did you try just washing them off with cold water, and drying them?

                      Heat them up and cover them with sauce. A good BBQ sauce may cover a multitude of sins.

                      If the bones are falling out, you can always glue them back in. A true Pit Master knows all the tricks.

                        Hmmm. Meat glue could clue the ribs to your mouth while eating them!
