My wife keeps a small container in the fridge and uses it typically to add some to sautéed green beans and refried beans.

I used what we called bear grease in a cap and ball revolver to keep it from firing more than one cylinder at a time.

I use a mason jar and keep it in the fridge. Every 10 years or so we may decide the bottom bit has been there too long and toss it and replace it with a new jar.

I leave it in the CI skillet on the stove covered. Just like my momma did.
When there is too much, I put it a mason jar and store it in the fridge. I generally use the bacon grease for frying eggs, bacon, etc. When I make fried chicken, 1 part bacon grease to 1 part crisco. Also I use bacon grease for making the roux for my gumbo.
