This may be an armature question but I have never needed to do it before.
I am cooking a full packer along with three racks of baby backs.
my question is has anyone cooked the ribs then wrapped in foil to rest/ keep warm in the Faux Cambridge until ready to put on a hot grill and sauce up when the time is right?
will this dry them out? Should I pull them early?
thanks.
I’ve done that technique a day in advance. Usually the reheat is over a gas grill. Just blast the burners on high and baste each side 30-45 seconds. Keep flipping and brushing with sauce until the ribs are warmed through.
